Overview

Taiyuan, capital of Shanxi Province, was historically known as Jinyang or the 'Dragon City' with over 2,500 years of history. Jinci is China's oldest surviving imperial sacrificial garden, where the Hall of the Holy Mother, Flying Bridge over Fish Pond and Everlasting Spring are called the 'Three Wonders of Jinci.' Shanxi Museum houses rich artifacts showcasing Sanjin civilization. The Twin Pagoda Temple's soaring twin pagodas are the city's symbol. Taiyuan is also China's noodle capital with knife-cut noodles, tixian and cat-ear noodles in endless varieties.

Taiyuan Knife-Cut Noodles

Taiyuan's most representative noodle dish. The chef holds dough in one hand, knife in the other, rapidly slicing noodles into boiling water. Smooth outside, chewy inside.

Taiyuan Toutou

Taiyuan's unique traditional medicinal soup made with lamb, mutton tail fat, yellow wine, astragalus root and yam. Served with pickled leeks and bread, warming in winter.

Guoyourou (Flash-fried Pork)

Traditional Shanxi dish, premium pork tenderloin flash-fried with wood ear mushrooms and bamboo shoots. Tender slices with savory, slightly sour flavor.

Laoshuku Yuanxiao (Glutinous Rice Balls)

Taiyuan's century-old snack. Glutinous rice balls filled with sesame, osmanthus and walnut. Thin skin, generous filling, soft and sweet, a must-eat during Lantern Festival.

World & Intangible Heritage

• Jin Opera (2006) — Regional opera of central Shanxi, inscribed as a National Intangible Cultural Heritage in 2006. Known for its high-pitched, passionate singing and bold, vigorous performance style. It is the most representative regional opera of Shanxi with classics such as 'Beating the Golden Branch' and 'The Empty City Stratagem.'
• Qingxu Aged Vinegar Brewing Technique (2006) — Traditional Shanxi aged vinegar brewing technique, inscribed as a National Intangible Cultural Heritage in 2006. Made from sorghum through five steps—steaming, fermenting, smoking, leaching, and aging—over several years. Rich, mellow, and aromatic, it is the foremost of China's four famous vinegars.
• Taiyuan Gong and Drum (2008) — Traditional percussion art of Taiyuan, inscribed as a Provincial Intangible Cultural Heritage in 2008. The drum beats are powerful and resounding with magnificent momentum. Performers move with vigor and boldness, often performing at festivals and major events—Taiyuan's most spectacular folk art.
